"Vincy''
Vincy is a local term meaning from/of St. Vincent, the beautiful southern Caribbean nation made up of 32 islands and cays and known for its fun loving people, chic private isles, volcanic landscapes, and beautiful beaches.

What do we mean by

A key advantage of being a small batch company is that our team gets to personally inspect every knob of ginger, root of turmeric, and scotch bonnet bell that passes through our kitchen.

Only the freshest limes are juiced and added just before carbonation, for the perfect acidity.

We take pride in
preserving both a recipe and process that has been passed down with great care. When Karl’s father advised him to rest the ginger beer for a minimum of three days, his words were heeded, resulting in our unique vintage fermentation process.

Every time we seal a cap, we ensure the flavor of Uncle Waithley’s gives a little history, personality and passion in every bottle

Karl Franz is "Vincy" and is the owner and founder of 67 Orange Street, the oldest cocktail bar in Harlem and one of the oldest cocktail bars in NYC.
A sought-after speaker and advisor on all things mixology, Karl has positioned himself as a business building powerhouse, innovation vanguard, and Harlem hero.
He also founded Anchor spa in New Haven, CT and developed the cocktail programs for many other bars and spirit companies.

The Hedonist
Ingredients:
- 2 OzRhum Barbancourt 5 Star
- ½ Oz Salers Aperitif
- ¼ OzOrgeat
- ½ OzCurried Simple Syrup
- ¾ Oz Lemon Juice
- 3 DashesCréole Bitters
- Top withUncle Waithley’s Vincy Brew
Directions:
Combine all ingredients except ginger beer into the shaker. Add ice. Shake it well. Double Strain into a High Ball Glass. Finish with Uncle Waithley’s

Brazilian Rum Punch
Ingredients:
- 4 OzLime Juice
- 8 OzSimple Syrup
- 8 OzAvua Cachaca Prata
- 4 OzPierre Ferrand 1840
- 4 OzGrapefruit Juice
- 4 OzCranberry Juice
- 2 OzCampari
- 4 OzUncle Waithley’s Vincy Brew
- 4 OzSparkling Water
- Cinnamon Sticks
- 5 -10Cloves
Directions:
Combine all ingredients except spices in a bowl without ice. Stir. Add one large ice cube. Add cinnamon sticks and cloves. Serves 6-8 people.

- 35 mlEl Tiqueleno Tequila Blanco
- 25 mlPacaharan Sierra de Orduna
- 25 mlLime Juice
- 3 dashesSaline Solution
- 25ml Uncle Waithley’s Vincy Brew
Directions:
Combine all ingredients except the ginger beer in a shaker. Shake with ice and strain into a highball glass over ice. Add Ginger beer to fill the glass. Garnish with a Jalapeno Slice

Long Pink Cadillac
Ingredients:
- 1.5 OzPlymouth Sloe Gin
- ¾ OzAverna Amaro
- ¾ OzLemon Juice
- ½ OzSt. Germain
- 4 DashesAngostura Bitters
- Uncle Waithley’s Vincy Brew
Directions:
Combine all ingredients except the ginger beer in a shaker. Shake with ice and strain into a highball glass over ice. Add Ginger beer to fill the glass. Garnish with a Lemon Wheel.

Caribbean Mule
Ingredients:
- 2 OzFigenza Fig Vodka
- 1 OzLime Juice
- ½ ozSimple Syrup
- 1 OzUncle Waithley’s Vincy Brew
Directions:
Mix all ingredients in a shaker tin except Ginger Beer.
Add ice. Shake it well.
Double Strain into the copper mug.
Top off with Ginger Beer.
Garnish with Sprig of Mint

Solomon and Kuff’s Dark & Stormy
Ingredients:
- 1.5 OzGoslings Dark Rum
- .5 OzBacardi 8
- ¼ OzLime Juice
- 3 OZUncle Waithley’s Vincy Brew
Directions:
Build in your High Ball glass. First add ice. Next is the lime juice and Uncle Waithley’s. Lastly, combine your rums in a mixing glass, and using a bar spoon, float them over the ingredients in your glass. Garnish with a lime wheel.

Ingredients:
- 1 ½ OzMartell VS
- 1 OzAppleton VX
- ½ OzHibiscus Syrup
- ¾ OzPineapple Juice
- 1 OzUncle Waithley’s Vincy Brew
- ½ OzLemon Juice
Directions:
Mix all ingredients in a shaker tin except Soda.
Add ice. Shake it well.
Strain into the highball
Garnish with Lemon Wheel
